Before anything else let’s dig into what is a fish fry?
Fish is basically an important part of many cuisines. Fried fish can be found in many parts of the world. Fish fry infers to the fish that has been prepared by deep or shallow frying in oil.
Prior the fish is marinated with different batters, spices and flavorings, fried and later served with onions, lemon juice, and green mint chutney.
Now let’s see, how to make it at home?
Recipe- for the marination
First, take ginger garlic paste, lemon juice, garam masala, turmeric, chili powder, and salt as per taste.
Now, marinate the fish with this mixture, and let it rest for about half an hour.
Recipe – fish fry marination
Mix gram flour and rice flour, red chilli powder, turmeric, salt a little bit and herbs (optional)
Mix the fish with the flour. Make sure the fish is covered properly. Let it moist for at least 15-20 minutes so that the flour sticks well to the fish.
Now for shallow frying. Take 2-3 spoons of oil in a pan and let it heat. After heating, fry the fish from both sides. Let it cook until golden brown. Ta-da your fish fry is ready to serve.
Here’s how to make a restaurant like the fish fry.
1 kg of fish as per your choice, 1 tbsp chilli powder, 1 tbsp turmeric, 1 tbsp ajwain
2 tbsp of gram flour
Salt of taste
6-7 garlic cloves
One inch of ginger
1 tsp cumin
2tsp coriander seeds
2tsp black peppercorns
1/2tbs of mustard seeds
1tbs fennel seeds
8-9 curry leaves
1 tbsp cornflour
1 tomato chopped
5-6 tsp tamarind extract
Oil for frying (mustard oil goes best with fish)
Now just jump to the recipe
Cut the fish into equal pieces, plop some slits on it.
Heat the pan and dry roast garlic, ginger, cumin, fennel, coriander, peppercorns, mustard seeds and curry leaves.
After roasting, grind them well and make a coarse ground powder.
Heat a pan, add 2 tbsp of oil and add the dry mixtures into it.
Add tomatoes, tamarind extract, turmeric and chilli powder
Make it slightly paste-like. Now sprinkle cornflour over the fish.
Marinate the fish and leave it for a minimum of 20 mins.
In a pan, pour some oil and fry the fish until cooked well.
Serve it with a lemon wedge and onion rings with the chat masala on top of it.
Tips to make perfect fish fry.
Coat your fish with egg wash and bread crumbs to make it super crispy.
Add herbs in the flour to give it a nice taste.
Use drain or brown paper to remove excess oil and to make it extra crispy.
Wash the fish 5-6 with running water to avoid smell while frying.
