Steps To Prepare Paneer Lababdar In Sanjeev Kapoor Style


This gravy is mildly sweet and full of flavours. Moreover cashews will play an important role in the texture and taste of the gravy. Let’s have a look at the ingredients.

INGREDIENTS

Always remember to take fresh ingredients. Take special care of the Paneer cubes as the fresh paneer cubes are soft so be gentle while cutting or mixing it.

PANEER (CUBES) 
200g
GRATED PANEER 50g

oil 2 tbsps

CASHEWS 10-12

GREEN CARDAMOM2 cloves

TOMATOES1.5 cup

CHOPPED onions medium

SALT Acc. to your taste

CUMIN SEEDS 1 tbsp

BUTTER 2 tbsp

FINELY CHOPPED GARLIC1 tbsp

GREEN CHILLI 
chopped
KASHMIRI RED CHILLY POWDER
1 tbsp

KASURI METHI (FENUGREEK LEAVES) POWDER

½ tbsp 

HONEY1 tbsp

GARAM MASALA 

¼ tbsp

CORIANDER LEAVES 
2 tbsp

FRESH CREAM (FOR GARNISHING ) 
1 tbsp

Coriander leaves should be fresh and washed. Maintain a balance of salt in the gravy. Be extra cautious with the gas. Avoid cooking on high flame. However,you can also use melon seeds with cashews. Add water accordingly otherwise it might get a little liquid in texture.

Now comes the Steps:

Step no. 1
Take a non-stick kadhai and add 2tbsps oil

Step no. 2
Add cumin seeds, cardamom, and cloves and sauté for 2 min.

It’s time to add chopped onions now. Sauté and mix till they turn light golden brown. Don’t let them turn dark brown

Step no. 4
Add tomatoes now and mix them well.

Now add salt according to your taste and then add
Cashews after mixing it properly. Turn off the gas.
Let it cool for a few minutes.

Step no. 6
It’s time to bring your mixer-grinder and transfer these into your blender jar (mixer jar). Add ½ cup of water
and blend it till it becomes a fine paste.

Step no. 7
Let’s get back to the same Kadai. Heat 1tbsp oil and
butter in it.

In addition to, lets spice it up!!!

Add garlic, ginger, and green chilli in the kadai and sauté for 2 minutes

Now add the Kashmiri red chilli powder and sauté for 2 minutes. Let the colour of the powder spread evenly.

Step no. 10
Add the mixed paste and add ½ cup of water in it. Mix it well and bring it to a boil.

Add dry kasuri methi powder and mix well


Step no. 12
Add honey. This will bring a mild sweet taste .
Mix it well while giving it a rest for few seconds

Now gently mix and it’s time to add the hero ingredient — Paneer.

After that, add 50 grams of grated Paneer and then mix it.
Now add the PANEER CUBES . Mix it gently

Step no. 14
Adjust the taste of salt accordingly and now add garam masala powder. Add fresh coriander leaves ( chopped) but mix it once again gently.

Step no. 15
Add fresh cream and mix it. Turn off the gas and transfer this mixture into a serving bowl .
Garnish it with sprinkling coriander and fresh cream.
